As a Culinary Skills graduate, the individual possesses the culinary confidence and competence required to work alongside cooks and chefs in professional kitchens and food service environments. The School of Culinary Arts at Niagara College is recognized for its exceptional reputation among graduates, employers, and industry partners. It offers an unmatched hands-on learning environment supported by leading-edge facilities and world-class chef-faculty. The school also maintains strong industry and community engagement through not-for-profit and catered events, recipe competitions, and opportunities for industry research and innovation. The graduate is able to provide fundamental culinary preparation and presentation for a variety of food service environments using both classical and contemporary techniques. They apply basic food and bake science to achieve desired end products and contribute to maintaining a safe, sanitary kitchen environment by adhering to health, safety, and food handling regulations. The graduate ensures the safe operation of the kitchen and promotes healthy work spaces through the responsible and efficient use of resources. They support menu development by applying knowledge of nutrition, food ingredients, and dietary requirements, including accommodations for allergies and intolerances. In addition, the graduate applies fundamental business principles and industry-standard costing and control practices to support fiscally responsible operations. They demonstrate an understanding of sustainability, ethical and local food sourcing, and food security, recognizing their impacts on food production, consumer choices, and food service operations. The graduate uses technology and contemporary kitchen equipment for food production and promotion, works effectively as a member of a food and beverage team, and contributes to the success of food-service operations through strong self-management and interpersonal skills. They also develop strategies for continuous personal and professional learning to remain current and responsive to emerging culinary techniques, regulations, and industry practices.
